Chicken Cacciatore

Sear the Chicken
In a large skillet, heat the olive oil over medium-high heat. Season the chicken thighs with salt and black pepper. Once the oil is hot, add the chicken thighs and sear them for about 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set it aside.

Add Tomatoes and Seasonings
Pour in the canned crushed tomatoes and chicken broth. Stir in the olives, capers, dried oregano, and additional salt and pepper to taste. Bring the mixture to a simmer.

Simmer the Chicken
Return the seared chicken thighs to the skillet. Cover and let it simmer on low heat for about 30-35 minutes, or until the chicken is cooked through and tender.

Add Cheese and Butter
Once the polenta has thickened, stir in the Parmesan cheese and butter until fully melted and incorporated. Adjust seasoning if necessary.

Serve
Spoon the polenta onto plates and top with the chicken cacciatore. Garnish with fresh herbs if desired.
