Beef Preparation

    Sear the Beef

    Season the beef chuck roast with salt and black pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef on all sides until browned, about 5-7 minutes. Remove from the pot and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, garlic, carrot, and celery. Sauté until softened, about 5 minutes.

    Deglaze with Wine

    Pour in the red wine to deglaze the pot, scraping any browned bits from the bottom. Bring to a simmer and reduce by half, about 5 minutes.

    Add Broth and Spices

    Return the beef to the pot. Add beef broth, thyme, and bay leaf. Bring to a gentle simmer.

    Braise the Beef

    Cover the pot and reduce the heat to low. Cook for about 6 hours, or until the beef is tender and easily shredded with a fork.

Tomato Sauce

    Prepare the Sauce

    In a separate saucepan, heat olive oil over medium heat. Add crushed tomatoes, sugar, salt, black pepper, and oregano. Simmer for 20 minutes, stirring occasionally.

    Combine Sauce with Beef

    Once the beef is done braising, remove it from the pot and shred it. Stir the shredded beef into the tomato sauce, and let it simmer together for an additional 10 minutes.

    In a large pot of salted boiling water, cook the mafalda pasta according to package instructions until al dente. Drain and set aside.
