Preparing the Lobster

    In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt. Once boiling, add the lobster tails and cover the pot. Poach for about 5-7 minutes until the lobster is cooked through but not overcooked. Remove the lobster tails from the pot and let them cool slightly. Once cool, remove the meat from the shells and chop it into bite-sized pieces.

Making the Creamy Sauce

    In a saucepan over medium heat, melt 3 tablespoons of butter. Once melted, add 2 tablespoons of all-purpose flour and whisk to combine. Cook for about 1-2 minutes until the mixture is lightly golden.

    Adding Liquids

    Slowly add 1 cup of heavy cream and 1 cup of lobster or seafood stock, whisking continuously to avoid lumps. Let the sauce simmer for about 5 minutes until it thickens.

    Seasoning the Sauce

    Stir in 2 teaspoons of minced garlic, 1 tablespoon of lemon juice, 1 teaspoon of paprika, and season with salt and black pepper to taste. Continue to cook for an additional 2 minutes, then remove from heat.

    In a large mixing bowl, combine the chopped lobster meat with the creamy sauce. Gently mix until the lobster is well-coated.
