Preheat the Oven

Preheat your oven to 425°F (220°C).

Prepare Ingredients

Wash and dry the chicken thighs and season them with salt, black pepper, and dried oregano. Slice the potatoes, onion, and bell peppers.

Sear the Chicken and Sausage

In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken thighs skin-side down and sear until golden brown, about 5-7 minutes. Flip and sear the other side for an additional 5 minutes. Remove the chicken and set aside. Next, add the Italian sausage links to the skillet and brown on all sides, about 5 minutes. Remove and set aside with the chicken.

Cook the Vegetables

In the same skillet, add the sliced onion, garlic, and potatoes. Sauté for about 5 minutes until they begin to soften. Add the sliced bell peppers and cook for another 3-4 minutes.

Combine and Roast

Return the chicken and sausage to the skillet. Pour in the chicken broth and sprinkle with red pepper flakes. Bring to a simmer, then transfer the skillet to the preheated oven. Roast for 30-35 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C) and the potatoes are tender.

Garnish and Serve

Remove the skillet from the oven. Garnish with freshly chopped parsley before serving. Enjoy your Chicken Scarpariello!
