    Sear the Beef

    Season the beef chuck roast with salt and black pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef on all sides until browned, about 4-5 minutes per side.

    Add Aromatics

    Add minced garlic to the pot and sauté for about 1 minute until fragrant.

    Deglaze and Braise

    Pour in the chianti wine and scrape the bottom of the pot to deglaze. Add beef broth, thyme sprigs, and bay leaf. Bring to a simmer, cover, and reduce heat to low. Cook for 2-3 hours until the beef is tender and easily shredded.

Caramelized Onions

    Cook the Onions

    In a pan over medium heat, add olive oil and sliced onions. Sprinkle with salt and sugar. Cook slowly, stirring frequently, until the onions are caramelized and golden brown, about 20-25 minutes.

Bruschetta Assembly

    Prepare the Bread

    Preheat your oven to 400°F (200°C). Arrange baguette slices on a baking sheet and lightly toast them in the oven for about 5-7 minutes.

    Assemble the Bruschetta

    On each toasted baguette slice, layer with shredded braised beef, a spoonful of caramelized onions, and a sprinkle of crumbled Gorgonzola cheese.

    Finish by sprinkling chopped fresh parsley over the bruschetta for garnish. Serve warm.
