Cocktail Base

Method

Prep & Chill

  1. 1

    Chill glass

Place your serving glass (rocks or coupe) in the freezer for a few minutes or fill it with ice water while you prepare the cocktail to ensure the drink stays cold.

  2. 2

If using toasted almond flakes for garnish, lightly toast a few slivered or flaked almonds in a dry skillet over medium heat for 1–2 minutes until fragrant; set aside to cool.

Build & Shake

  1. 3

Add 6 ice cubes to the cocktail shaker.

  2. 4

Pour in the aged dark rum (1.5 oz), Irish cream (1 oz), coffee liqueur (0.75 oz), and amaretto (0.5 oz).

  3. 5

Add heavy cream (1 oz). If you prefer a slightly sweeter or smoother result, add simple syrup (0.25 oz).

  4. 6

Secure the shaker lid and shake vigorously for 12–18 seconds until the outside of the shaker becomes very cold and the cream is well emulsified, producing a slightly frothy texture.

  5. 7

If you want an extra-silky finish, double-strain the cocktail through the shaker’s strainer and a fine mesh strainer into the chilled serving glass to remove shards of ice and any tiny solids.

Finish & Garnish

  1. 8

Top the cocktail with a dollop (about 1 tbsp) of whipped cream placed gently on the surface so it sits as a creamy cap.

  2. 9

Lightly dust the whipped cream with grated chocolate or a pinch (0.25 tsp) of cocoa powder.

  3. 10

Sprinkle the toasted almond flakes on the whipped cream if using. Optionally, you can add a single whole coffee bean for a decorative touch.

  4. 11

Serve immediately with a short stirring pick or cocktail spoon so the drinker can mix the cream into the drink if desired.
