Chill glass
Place a Champagne flute (or coupe) in the freezer for 5–10 minutes or fill it with ice water while you prepare the cocktail to ensure the finished drink stays cold.

Combine base ingredients
In a cocktail shaker, add the gin, fresh lemon juice, and simple syrup. Fill the shaker with ice (enough to fill it about two-thirds).

Shake
Secure the shaker and shake vigorously for 10–12 seconds, until the shaker is cold to the touch. This chills and slightly dilutes the mixture for balance.

Top with sparkling wine
Slowly top the cocktail with the Champagne or other dry sparkling wine (about 3 oz). Pour gently down the side of the glass to preserve bubbles and avoid excessive foaming.

Garnish and serve
Express the oils of a lemon twist over the drink by holding the twist over the flute and quickly pinching it so the oils spray onto the surface. Rub the twist around the rim if you like, then drop it into the drink. Serve immediately.
