Strawberry-Lemon Syrup

Method

Strawberry-Lemon Syrup

  1. 1

    Cook syrup

Combine the quartered strawberries, sugar, and water in a small saucepan over medium heat. Stir occasionally until the sugar dissolves and the strawberries begin to break down, about 5–7 minutes.

  2. 2

    Simmer and mash

Reduce heat to low and simmer gently for 4–6 minutes, mashing the strawberries with a fork or potato masher to release their juices and concentrate flavor.

  3. 3

    Finish with lemon

Remove from heat, stir in 2 tablespoons fresh lemon juice. Let the mixture cool for 10 minutes to allow flavors to meld.

  4. 4

    Strain

Strain the syrup through a fine-mesh sieve into a bowl or jar, pressing on solids to extract juices. Discard solids. Cool syrup to room temperature, then refrigerate if not using immediately. Yields about 3.5–4 oz syrup (enough for 4 drinks).

Cocktail Assembly

  1. 5

    Prepare glass

Fill a rocks glass or short tumbler about three-quarters full with crushed ice.

  2. 6

    Shake base

In a cocktail shaker, add 2 oz gin, 0.75 oz fresh lemon juice, and 0.75 oz cooled strawberry-lemon syrup. Fill the shaker with ice and shake vigorously for 10–12 seconds until well-chilled.

  3. 7

    Strain over ice

Strain the shaken mixture into the prepared glass over the crushed ice.

  4. 8

    Add blackberry float

Slowly pour 0.5 oz blackberry liqueur (or blackberry syrup) over the back of a spoon so it sinks and creates a bramble-like floating ribbon of color.

  5. 9

    Top (optional)

If you prefer a slightly longer, lighter drink, top with about 1 oz club soda; otherwise omit for a stronger cocktail.

  6. 10

    Garnish and serve

Garnish with a halved fresh strawberry threaded on the rim or floating in the glass, a lemon wheel, and a sprig of mint. Serve with a short straw and enjoy.
