    Muddle raspberries

    Place 8 fresh raspberries into a cocktail shaker or mixing glass. Add 0.75 oz fresh lime juice and 0.5 oz simple syrup. Use a muddler or the back of a spoon to gently muddle the raspberries until they break down and release their juices, but don't pulverize the seeds excessively (about 10–15 seconds).

    Add gin and ice

    Add 1.5 oz gin to the muddled raspberry mixture. Fill the shaker with ice (about 1 cup) and shake vigorously for 10–12 seconds to chill and slightly dilute the mixture.

    Double-strain into glass

    Double-strain the shaken mixture (through a hawthorne strainer and a fine mesh strainer or a fine sieve) into a chilled highball or Collins glass filled with fresh ice. Double-straining removes raspberry seeds and pulp for a smoother drink.

    Top with ginger beer

    Slowly top the strained cocktail with 4 oz chilled ginger beer. Gently stir once or twice with a bar spoon to combine, taking care not to over-stir so the ginger beer retains its effervescence.

Garnish

    Skewer 3 whole raspberries onto a cocktail pick (or drop them directly into the glass). Add 1 lime wheel on the rim or floated in the drink. Optionally tuck a fresh mint sprig into the glass for aroma. Serve immediately.
