    Prepare glass

    If using the optional dry vermouth rinse: pour 0.25 oz dry vermouth into a chilled coupe or Nick & Nora glass, swirl to coat the interior, then discard the excess. Chill the glass while you prepare the cocktail.

    Add main ingredients

    In a cocktail shaker without ice, combine 2 oz gin, 0.5 oz raspberry syrup, 0.75 oz fresh lemon juice, and 1 large egg white. If you prefer a slightly sweeter drink, include 1 tsp sugar (or powdered sugar) now so it dissolves well during the dry shake.

    Dry shake (create foam)

    Seal the shaker and shake vigorously for 15–20 seconds (the 'dry shake'). This develops a stable, silky foam from the egg white.

    Wet shake (chill and dilute)

    Open the shaker, add 6 ice cubes, reseal, and shake hard for another 10–15 seconds until the outside of the shaker becomes very cold (about 10–15 seconds). This chills, dilutes, and further integrates the foam.

    Strain

    Double-strain the cocktail into the chilled coupe using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any raspberry seeds for a smooth texture.

    Garnish and serve

    Garnish with 2 fresh raspberries threaded on a small pick or gently floated on the foam. Optionally, zest a small strip of lemon peel over the drink to express oils, then discard. Serve immediately.

    Notes on substitutions & safety

    If you prefer not to use raw egg white, substitute 0.5 oz aquafaba (chickpea liquid) for a vegan foam. Always use fresh eggs and practice safe food handling when consuming raw egg. Raspberry syrup can be made by heating equal parts sugar and water with fresh or frozen raspberries, straining, and cooling.
