Drink Base

Citrus & Sweeteners

Method

Prep

  1. 1

    Chill glass

Place a highball or hurricane glass in the freezer for 5–10 minutes or fill it with ice water while you prepare ingredients so the drink stays bright and cold.

  2. 2

Measure and ready all juices, rums, blue curaçao, grenadine, and simple syrup so assembly is quick.

Mixing

  1. 3

    Build the cocktail

Fill a cocktail shaker halfway with ice cubes. Add 2 oz light rum, 0.5 oz coconut rum (if using), 2 oz pineapple juice, 1 oz orange juice, 0.5 oz blue curaçao, 0.5 oz fresh lime juice, and 0.25 oz simple syrup. Secure the lid.

  2. 4

    Shake

Shake vigorously for 10–15 seconds until the shaker feels cold to the touch and the exterior is slightly frosted. This chills and dilutes the drink to balance sweetness.

Assemble & Finish

  1. 5

    Prepare glass

Discard the ice water from the chilled glass if used. Fill the glass with crushed ice (about 1 cup).

  2. 6

    Strain and layer

Double-strain the shaken mixture over the crushed ice into the glass to keep the drink smooth and free of shards. Slowly pour 0.25 oz grenadine down the inside edge of the glass; it will sink and create a sunrise-to-blue gradient evocative of Bikini Bottom.

  3. 7

    Garnish

Garnish with a pineapple wedge and a maraschino cherry on a pick. Add a mini paper umbrella for a playful touch. Serve with a short stirring straw so the guest can mix the layers if desired.
