Prepare filling

Warm and season meat
If using leftover cooked shredded chicken or cooked ground beef, place in a medium skillet over medium heat. Add the chopped onion and green bell pepper. Sprinkle cumin, chili powder, salt, and black pepper over the meat and vegetables. Stir and cook 3–4 minutes until warmed through and the onion softens. If your meat is cold, break up any large pieces as it heats. Remove from heat and set aside.

Taste the filling and adjust seasoning as needed. The filling should be savory but not overly salty because cheese adds saltiness as well.
Assemble quesadillas

Lay 1 flour tortilla flat on a clean work surface. Sprinkle about 1/2 cup of shredded cheese evenly over half of the tortilla, leaving a small border at the edge.

Spoon about 1/4 cup of the prepared shredded chicken (or ground beef) mixture on top of the cheese, spreading it evenly but keeping it on the cheese-covered half.

Add another 1–2 tablespoons of cheese on top of the meat (this helps the top and bottom stick together), then fold the empty half of the tortilla over the filled half to make a semicircle.

Repeat with remaining tortillas and filling to make 3 more quesadillas.
Cook quesadillas

Heat a large nonstick skillet or griddle over medium heat. Add 1/2 tablespoon of vegetable oil or butter and swirl to coat. (Alternatively, lightly spray the pan with cooking spray.)

Place one assembled quesadilla in the hot skillet. Cook 2–3 minutes on the first side, pressing lightly with a spatula, until the tortilla is golden brown and the cheese begins to melt.

Carefully flip the quesadilla and cook an additional 1.5–2 minutes until the second side is golden and the cheese is fully melted. Adjust heat to prevent burning—medium to medium-low works best.

Transfer the cooked quesadilla to a cutting board and repeat with remaining quesadillas, adding more oil or butter to the skillet as needed.
Serve

Let each quesadilla rest 1 minute, then cut into 2–3 wedges with a sharp knife or pizza cutter.

Serve warm with sour cream, salsa, and lime wedges. Garnish with chopped cilantro if using.
