Margarita base

Method

Margarita base

  1. 1

    Prepare shaker

If you want a salted rim, rub the lime wedge around the outside lip of a rocks or mule-style copper mug, then dip the rim into a shallow plate with the coarse salt to coat lightly. Set the glass aside.

  2. 2

    Combine and shake

Add 2 oz blanco tequila, 1 oz fresh lime juice, 0.5 oz orange liqueur, 0.25 oz agave syrup and 6 ice cubes to a cocktail shaker. Secure the lid and shake vigorously for 12–15 seconds until well chilled and slightly diluted.

  3. 3

    Strain

Fill the prepared serving glass with 4 ice cubes. Double-strain (or fine-strain) the shaken margarita mixture into the glass to remove ice shards and pulp, leaving room at the top for the ginger beer.

Ginger mule finish

  1. 4

    Top with ginger beer

Slowly pour 4 oz ginger beer over the strained margarita in the glass. Pour gently so it layers and retains carbonation.

  2. 5

    Garnish and serve

Garnish with a lime wheel or wedge on the rim and optionally a candied ginger or fresh ginger slice on a pick. Serve immediately with a short stirper (or let the drink maintain a slight effervescence).

Notes

  1. 6

Adjust sweetness by increasing or decreasing agave syrup by 0.25 oz increments. For more heat/ginger bite, use a spicier ginger beer or muddle a thin slice of fresh ginger in the shaker before combining other ingredients (strain before topping with ginger beer).
