Portion and freeze
Use a 1.5-inch to 2-inch ice cream scoop (or tablespoon) to form three small balls of vanilla ice cream, about 1/2 cup total divided into three. Place each ball on a square of plastic wrap or parchment. Wrap tightly and shape into compact spheres. Freeze the wrapped balls on a baking sheet or plate for at least 1 hour, ideally 2 hours, until very firm (this prevents melting during coating and frying).

Prepare corn flake coating
Place corn flakes in a zip-top bag or food processor and crush to small crumbs (but not powder). Transfer to a shallow bowl. Stir in 1 tablespoon granulated sugar, 1/4 teaspoon ground cinnamon (optional) and 1/8 teaspoon salt to evenly combine.

When ice cream balls are very firm, unwrap one and roll it in the corn flake crumb until fully coated. Press gently to adhere. Wrap back in plastic and return to the freezer while you coat the others. Freeze coated balls at least 30 minutes before battering.
Coating — Fruity Pebbles

Prepare Fruity Pebbles coating
Crush Fruity Pebbles in a bag or food processor to fine crumbs. Transfer to a shallow bowl and stir in 1 tablespoon powdered sugar to help adhesion.

Coat one frozen ice cream ball by rolling and pressing into the Fruity Pebbles crumbs until fully covered. Wrap and freeze the coated ball at least 30 minutes before continuing.
Coating — Cocoa Pebbles

Prepare Cocoa Pebbles coating
Crush Cocoa Pebbles to small crumbs. Combine with 1/2 teaspoon unsweetened cocoa powder in a shallow bowl and mix evenly.

Coat the remaining ice cream ball with the cocoa pebble mixture, pressing gently to adhere. Wrap and freeze for at least 30 minutes.

Make the batter
In a small bowl whisk together 1 large egg, 2 tablespoons whole milk, 3 tablespoons all-purpose flour, 1 teaspoon granulated sugar, and 1/4 teaspoon vanilla extract until a smooth, thick batter forms. If batter seems too thin to cling, add up to 1 tablespoon more flour. Stir in 2 tablespoons fine breadcrumbs if using; this gives extra texture.

Freeze solid
Ensure coated ice cream balls have been frozen at least 30 minutes after coating and are very firm (ideally 1–2 hours total frozen after coating). Preheat a heavy-bottomed pot with about 1 to 1.5 inches of vegetable oil (approximately 1 cup) to 375°F (190°C). If you do not have a thermometer, oil should form small steady bubbles around a wooden skewer placed in it.

Batter and fry quickly
Working one ball at a time and keeping others in the freezer, unwrap a coated ice cream sphere. Dip it quickly into the batter to fully coat (use a spoon to help coat evenly), then immediately return it to the same coating bowl (corn flakes, Fruity Pebbles or Cocoa Pebbles) and roll to re-coat — this double layer helps insulate. With a slotted spoon or spider, carefully lower the battered, coated ice cream ball into the hot oil and fry for 8–12 seconds, turning once—just until the exterior is golden and crisp. Avoid frying longer to prevent melting. Remove quickly and place on paper towels for a few seconds to drain. If oil temperature drops, wait for it to return close to 375°F before frying the next ball.

If you prefer, you can deep-fry for 6–10 seconds at 375°F; timing depends on oil volume and ball temperature. The interior should remain frozen; if the center softens too much, freeze longer next time or reduce frying time.
Finishing (optional)

Serve each fried ice cream ball immediately on chilled dessert plates. Top with a drizzle of honey or chocolate sauce (about 1 tablespoon per ball), a dollop of whipped cream, and garnish with a mint leaf or cherry. Serve immediately to preserve contrast between hot crisp exterior and cold ice cream interior.
