Marinated Portobello Mushrooms

Method

Marinating the Portobello Mushrooms

    Prepare the Marinade

    In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, fresh thyme, salt, and black pepper.

    Marinate the Mushrooms

    Place the portobello mushrooms in a shallow dish and pour the marinade over them. Ensure the mushrooms are well coated. Cover and let them marinate for at least 30 minutes at room temperature.

Grilling the Mushrooms

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Mushrooms

    Place the marinated portobello mushrooms on the grill. Cook for about 5-7 minutes on each side, until they are tender and have nice grill marks.

Assembling the Sandwich

    Prepare the Ciabatta Buns

    Cut the ciabatta buns in half and lightly toast them on the grill or in a toaster.

    Layer the Ingredients

    Spread a layer of goat cheese on the bottom half of each toasted ciabatta bun. Add a grilled portobello mushroom, followed by roasted red peppers, shredded mozzarella cheese, fresh spinach, and sliced tomatoes.

    Top with the other half of the ciabatta bun and press down gently.
