Making the Cheese
1. Prepare the Milk
In a large pot, pour 4 cups of milk and heat it over medium heat until it reaches about 190°F (88°C), stirring occasionally to prevent scorching.
2. Add Vinegar
Once the milk is hot, remove it from heat and slowly stir in 0.5 cups of white vinegar. Let it sit for about 10 minutes to allow the curds to form.
3. Strain the Curds
Line a colander with cheesecloth and pour the curdled milk into it. Allow it to drain for about 15-20 minutes, or until it reaches your desired consistency.
4. Add Salt and Optional Cream
Transfer the curds to a mixing bowl. Add 1 tsp of salt and optional 0.5 cups of cream if you prefer a creamier texture. Mix well.

If desired, add flavorings such as 1 tsp of dried oregano, 0.5 tsp of garlic powder, pepper to taste, and 2 tbs of chopped fresh herbs. Mix until evenly distributed.
6. Taste and Adjust
Taste the cheese and adjust seasonings as needed, adding more salt or herbs according to your preference.
7. Chill the Cheese
Transfer the cheese to an airtight container and refrigerate for at least 2 hours before serving to let the flavors meld.
