Prepare the Sweet Potatoes

Peel and chop the sweet potatoes into small cubes. Boil them in salted water for about 15 minutes or until tender. Drain and mash them with a fork or potato masher until smooth.

Cook the Tofu

While the sweet potatoes are cooking, drain the tofu and press it to remove excess moisture. Crumble the tofu into bite-sized pieces.

Caramelize the Onions

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook, stirring occasionally, until caramelized, about 10-15 minutes.

Combine Ingredients

Add the crumbled tofu to the skillet with the caramelized onions, and cook for another 5-7 minutes, stirring occasionally. Season with salt and black pepper.

Mix in Sweet Potatoes

Fold in the mashed sweet potatoes into the skillet, mixing until well combined. Adjust seasoning and add hot sauce to taste.

Toast the Sourdough

While the hash is cooking, toast the sourdough bread slices until golden brown.

Serve

Serve the sweet potato and tofu hash hot, accompanied by the toasted sourdough. Drizzle additional hot sauce on top if desired.
