Pork Shank Preparation

Sear the Pork

In a large pot, heat olive oil over medium heat. Season the pork shanks with salt and pepper, then sear them on all sides until browned. Remove and set aside.

Sauté Aromatics

In the same pot, add chopped onion and minced garlic, sautéing until softened.

Braise the Shank

Add the Madeira wine, chicken stock, thyme, and bay leaves. Return the pork shanks to the pot, ensuring they are submerged in the liquid. Bring to a simmer, cover, and braise for about 2 hours until tender.

Cook Sweet Potatoes

In a medium pot, combine cubed sweet potatoes, water, and a pinch of salt. Bring to a boil and cook until tender, about 15 minutes. Drain and set aside.

Candy the Sweet Potatoes

In the same pot, add butter, brown sugar, cinnamon, nutmeg, and the cooked sweet potatoes. Stir gently to coat and cook over low heat until the sugar is melted and the potatoes are glazed.

Sauté Cabbage

In a large skillet, heat olive oil over medium heat. Add sliced onion and shredded cabbage, sautéing until the cabbage is wilted.

Add apple cider vinegar, brown sugar, salt, and pepper. Stir and cover, cooking for about 20 minutes until tender.
