    Prepare the Ingredients

    Rinse and soak black-eyed peas in water for at least 4 hours or overnight. Drain and set aside. Chop the onion, celery, bell pepper, and garlic.

    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add chopped onion, celery, bell pepper, and garlic. Sauté until softened, about 5-7 minutes.

    Cook Peas and Rice

    Add the soaked black-eyed peas and vegetable broth to the pot. Bring to a boil, then reduce heat to a simmer. Cook for 30 minutes.

    Add Rice and Okra

    Stir in the Carolina Gold rice and sliced okra. Season with salt, black pepper, and cayenne pepper. Cover and cook for an additional 20-25 minutes, or until the rice is tender and the liquid is absorbed.
