Preheat the Oven

Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients

In a large bowl, whisk together flour, baking powder, baking soda, and salt until well combined.

Cut in Butter

Add the cold unsalted butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

Add Buttermilk

Make a well in the center of the mixture and pour in the buttermilk. Stir gently until just combined. Do not overmix.

Shape the Dough

Turn the dough out onto a floured surface and gently knead it just a few times until it comes together. Pat it into a rectangle about 1 inch thick.

Cut Biscuits

Use a biscuit cutter or a glass to cut out biscuits. Place them on the prepared baking sheet, making sure they are touching slightly.

Bake

Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.

Prepare Honey Butter

While the biscuits are baking, mix together 1/2 cup of softened butter and 1/4 cup of honey until well combined.

Serve

Remove biscuits from the oven, let cool slightly, and serve warm with seasonal jam and honey butter.
