Preparation Instructions
Prepare Chicken
Cut the chicken breast into bite-sized pieces. Season with salt and pepper.
Prepare Pork
Slice the pork tenderloin into thin medallions. Marinade with your favorite spices for at least 30 minutes.
Prepare Tofu
Press the tofu to remove excess moisture, then cut into cubes. Marinate in soy sauce for 15 minutes.
Prepare Eggplant
Slice the eggplant into 1/2 inch thick rounds. Salt the slices and let them sit for 20 minutes to draw out moisture, then rinse and pat dry.
Cooking
In a large skillet or wok, heat oil over medium-high heat. Cook the chicken pieces until browned and cooked through (about 5-7 minutes). Remove and set aside. Repeat the same for pork, then tofu, and finally eggplant, cooking until tender and golden.
Combine
Combine all cooked ingredients in the skillet. Stir-fry for an additional 2-3 minutes, adding a splash of soy sauce or your favorite sauce for flavor. Serve hot.
