Start by slicing the chicken breast into thin strips, and chop all the vegetables and herbs.

Prepare the Ingredients

In a large pot, bring the chicken broth to a boil. Add the sliced chicken breast and let it cook for about 5-7 minutes until cooked through.

Cook the Chicken

Add the sliced mushrooms, chopped tomatoes, onion, galangal, kaffir lime leaves, and Thai chili peppers to the pot. Let it simmer for an additional 5 minutes.

Add Vegetables and Herbs

Stir in the fish sauce and lime juice. Taste and adjust the seasoning as needed, adding more fish sauce or lime juice if desired.

Season the Soup

Remove from heat and add the chopped cilantro and scallions. Serve hot.
