Traditional Enchiladas Recipe
Shredded beef, chicken, or cheese enchiladas in two corn tortillas, topped with our house-made dried red chile powder enchilada sauce, finished with melted Jack cheese, and served with rice and beans.

Prepare the Enchiladas
Preheat your oven to 350°F (175°C). Soften the corn tortillas by lightly frying them in a skillet with a little oil for about 10-15 seconds on each side. This will make them pliable.

Assemble the Enchiladas
Take a softened tortilla, add a portion (about 1/4 cup) of shredded beef, chicken, or cheese in the center, and roll it up tightly. Repeat with the remaining tortillas and filling.

Add Sauce and Cheese
Place the rolled enchiladas seam-side down in a greased baking dish. Pour the house-made red chile powder enchilada sauce over the top, ensuring they are well covered. Sprinkle the shredded Jack cheese evenly on top.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
