Prepare the Enchiladas

Preheat your oven to 375°F (190°C). In a large baking dish, spread a thin layer of tomatillo sauce on the bottom.

Assemble the Enchiladas

Take a corn tortilla and fill it with shredded chicken and a small amount of tomatillo sauce. Roll it up and place it seam-side down in the baking dish. Repeat for all tortillas.

Add Sauce and Cheese

Once all enchiladas are in the baking dish, pour the remaining tomatillo sauce over the top. Sprinkle shredded cheese evenly over the sauce.

Bake

Cover the dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for another 10-15 minutes until the cheese is melted and bubbly.

Garnish and Serve

Remove from the oven and let cool for a few minutes. Garnish with shredded lettuce, cotija cheese, diced tomato, and a drizzle of Mexican cream before serving.
