Prepare the Ingredients
Gather all the ingredients needed for the nachos.
Cook the Chorizo
In a skillet over medium heat, cook the pork chorizo until browned and fully cooked. Drain excess fat.
Layer the Nachos
On a large baking sheet, spread out the totopos evenly.
Add Refried Beans
Spread the refried beans over the totopos.
Add Pork Chile Verde
Spoon the pork chile verde evenly over the nachos.
Add Chorizo and Cheese
Sprinkle the cooked chorizo on top and then cover generously with shredded Jack cheese.
Melt the Cheese
Place the baking sheet in a preheated oven at 350°F (175°C) for about 10-15 minutes or until the cheese is melted and bubbly.
Add Toppings
Remove from the oven and immediately top with pico de gallo, guacamole, sour cream, sliced black olives, chopped green onions, and jalapeños.
Serve
Serve the nachos hot, with additional sour cream and guacamole on the side if desired.
