Prepare the Ingredients
Begin by slicing the top sirloin tips into bite-sized pieces. Chop the bacon, jalapeños, and onion. Dice the fresh tomatoes.
Cook the Bacon
In a large skillet, heat the olive oil over medium heat. Add the bacon and cook until crispy. Remove the bacon and set aside, leaving the rendered fat in the skillet.
Sauté the Vegetables
In the same skillet, add the onions and jalapeños. Sauté for about 3-4 minutes until the onions are translucent. Then add the diced tomatoes and cook for an additional 2 minutes.
Cook the Sirloin Tips
Increase the heat to medium-high and add the top sirloin tips to the skillet. Season with salt and black pepper. Sauté for about 5-7 minutes until the beef is browned and cooked to your desired doneness.
Combine Ingredients
Add the cooked bacon back into the skillet and mix everything together. Allow to heat through for a minute.
Serve
Serve the sirloin tip mixture over a bed of mole almendras. Accompany with refried beans and warm tortillas on the side.
