Method

Preparation Steps

  1. 1

    Prepare the Pork Carnitas

In a skillet, heat olive oil over medium heat. Add the pork carnitas and cook until heated through and slightly crispy. Season with salt and pepper to taste.

  2. 2

    Cook the Bacon

In a separate pan, cook the bacon strips until crispy. Remove and drain on paper towels.

  3. 3

    Poach the Eggs

In a pot of simmering water, carefully crack the eggs and poach them until the whites are set, about 3-4 minutes. Remove with a slotted spoon.

  4. 4

    Assemble the Dish

On a plate, layer the heated pork carnitas, then pour the mole amarillo sauce over the top. Sprinkle with shredded Jack cheese, and place the poached eggs on top.

  5. 5

    Add Crispy Bacon and Chips

Crumble the crispy bacon over the eggs and garnish with flour tortilla chips around the edges.

  6. 6

    Serve with Sides

Serve with a side of Spanish rice and refried beans.
