Preparation Instructions

  1. 1

    Prepare the Tortillas

Heat the cooking oil in a skillet over medium heat. Once hot, lightly fry the corn tortillas for about 30 seconds on each side until they are soft but not crispy. Remove and drain on paper towels.

  2. 2

    Fill the Tortillas

Spread a generous spoonful of refried beans in the center of each tortilla. Fold the tortillas into triangles, enclosing the filling.

  3. 3

    Assemble the Enmoladas

Place the folded tortillas on a serving plate. Pour the heated mole negro sauce over the top, ensuring they are well coated.

  4. 4

    Add Toppings

Sprinkle the queso fresco and cotija cheese blend generously over the mole. Top with pickled red onions.

  5. 5

    Serve

Serve immediately while warm, with additional mole on the side if desired.
