Preparation

Pickling the Onions

In a bowl, combine the thinly sliced red onion, lemon juice, and salt. Let it marinate for at least 30 minutes.

Making the Coleslaw

In a large bowl, combine shredded cabbage, shredded carrot, vinegar, olive oil, salt, and pepper. Toss well and set aside.

Preparing the Yam

Peel and cut the yam into thick sticks. Steam or boil until tender, about 10-15 minutes. Let it cool and set aside.

Making the Sauce

In a small bowl, mix soy sauce, sesame oil, honey, and Sriracha. Adjust the spice level to your taste.

Grilling the Tortillas

Heat a grill pan over medium heat. Grill the flour tortillas for about 1 minute on each side until warm and slightly toasted.

Assembling the Tacones

On each tortilla, layer a portion of coleslaw, yam sticks, pea shoots, and pickled onions. Drizzle with the sauce.

Rolling and Serving

Carefully roll the tortilla into a hand-held taco shape. Serve immediately with extra sauce on the side.
