Tempura cod or tempura salmon on a hot dog roll, dill dijonnaise, tartar, lemon-pickled onions, dill pickles
In a bowl, mix the tempura batter mix with water until smooth. Heat oil in a deep frying pan over medium-high heat. Dip the cod fillets into the batter and carefully place them in the hot oil. Fry until golden brown and cooked through, about 4-5 minutes. Remove and drain on paper towels.
Slice the hot dog rolls lengthwise but not all the way through. Spread a generous amount of dill dijonnaise on the inside of the rolls. Place a piece of the tempura cod inside each roll.
Top the cod with tartar sauce, a handful of lemon-pickled onions, and dill pickles.
Serve immediately while hot, and enjoy your delicious Cod Dog!
