Pickling the Onions

In a bowl, combine the thinly sliced red onions, lemon juice, and salt. Let it sit for at least 30 minutes to pickle.

Making the Coleslaw

In a large bowl, mix together the shredded cabbage, julienned carrot, mayonnaise, apple cider vinegar, salt, and pepper. Adjust seasoning to taste.

Marinating the Prawns

In a bowl, toss the prawns with olive oil and spice mix. Let them marinate for about 15 minutes.

Cooking

Grilling the Prawns

Heat a grill or grill pan over medium-high heat. Grill the marinated prawns for 2-3 minutes on each side until they are cooked through and slightly charred.

Warming the Tortillas

Warm the flour tortillas on the grill for about 30 seconds on each side until soft and pliable.

Assembly

Constructing the Tacos

On each tortilla, layer the coleslaw, grilled prawns, pickled onions, and top with pea shoots and fresh cilantro. Roll it up like a hand-roll taco.
