Preparation

Prepare the Lemon-Pickled Onions
Thinly slice red onions and soak in a mixture of lemon juice and water for at least 30 minutes.

Make the Tempura Batter
In a bowl, mix all-purpose flour, cornstarch, baking powder, and salt. Gradually add ice cold water until a smooth batter forms.

Prepare the Cod
Cut cod fillets into bite-sized pieces and coat them in the tempura batter.

Fry the Cod
Heat oil in a deep pan over medium heat. Fry the battered cod pieces until golden brown and cooked through, about 3-4 minutes. Drain on paper towels.

Prepare the Tacos
Warm the flour tortillas on a grill or skillet. On each tortilla, layer coleslaw, fried cod, pea shoots, and lemon-pickled onions.

Add Sauce
Drizzle the mayonnaise, sriracha, and lime juice sauce over the fillings.

Serve
Roll the tortillas into hand-held tacos and serve immediately.
