Preparation and Cooking

    Marinate the Salmon

    In a small bowl, whisk together olive oil, salt, black pepper, lemon juice, and honey. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

    Prepare the Pickled Onions

    Thinly slice the red onion and place it in a bowl. Mix equal parts of vinegar and water, enough to cover the onions, and add a pinch of salt. Let it sit for at least 15 minutes to pickle.

    Grill the Salmon

    Preheat the grill to medium-high heat. Remove the salmon from the marinade and place it on the grill. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

    Prepare the Cucumber

    Slice the cucumber into thin rounds.

    Assemble the Dish

    Once the salmon is cooked, place it on a serving plate. Top with the lemon-pickled onions, cucumber slices, pea shoots, and chopped green onions.
