Prepare Lobster Stock
If using lobster shells, simmer them in water for about 30 minutes to create a rich lobster stock. Strain and set aside.

Add Tomato Paste and Wine
Stir in the tomato paste and cook for an additional 2 minutes. Pour in the white wine and let it simmer until reduced by half.

Add Stock
Add the lobster stock (or fish stock) and bring to a gentle simmer. Let it cook for about 15 minutes.

Blend the Soup
Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of it.

Stir in Cream and Lobster
Reduce the heat to low and stir in the heavy cream and lobster meat. Cook for an additional 5 minutes, allowing the flavors to meld.

Season with cayenne, salt, and black pepper to taste. Serve hot, garnished with chopped chives.
