Prepare the Oysters
Rinse the fresh oysters under cold water and gently scrub the shells to remove any grit or sand. Drain and set aside.
Make the Breading
In a large bowl, combine the all-purpose flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper. Mix well.
Coat the Oysters
Pour the buttermilk into a separate bowl. Dip each oyster into the buttermilk, allowing the excess to drip off, then dredge in the flour mixture until fully coated.
Heat the Oil
In a deep frying pan or large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Oysters
Working in batches, carefully add the coated oysters to the hot oil. Fry for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.
