Prepare the Filling

    Mix Filling Ingredients

    In a large mixing bowl, combine the shredded chicken, shredded cheese, chopped onion, chopped cilantro, and taco seasoning. Mix well until all ingredients are evenly distributed.

Prepare the Sauce

    Prepare Enchilada Sauce

    In a saucepan over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the enchilada sauce and stir to combine. Allow the sauce to simmer for about 5 minutes, stirring occasionally.

Assemble the Enchiladas

    Fill the Tortillas

    Preheat your oven to 375°F (190°C). Take a corn tortilla and spoon about 2-3 tablespoons of the chicken filling onto the center of the tortilla. Roll the tortilla tightly around the filling and place it seam-side down in a greased baking dish.

    Add Sauce

    Repeat this process until all tortillas are filled and placed in the baking dish. Pour the prepared enchilada sauce evenly over the top of the filled tortillas.

    Bake

    Sprinkle any remaining cheese on top of the enchiladas. Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

    Serve

    Remove the enchiladas from the oven and let them cool for a few minutes. Serve warm, topped with sour cream and sliced jalapeños, if desired.
