Preparing the Filling

Mix the Cheeses
In a large mixing bowl, combine the shredded cheddar cheese, shredded mozzarella cheese, and cream cheese. Stir until well combined and set aside.
Assembling the Quesadilla

Layer the Filling
Place one flour tortilla on a clean surface. Spread a generous amount of the cheese mixture evenly over half of the tortilla.

Fold the Tortilla
Fold the tortilla in half to cover the cheese filling. Press down gently to seal.
Cooking the Quesadilla

Heat the Oil
In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Cook the Quesadilla
Carefully place the folded quesadilla into the skillet. Cook for about 3-4 minutes until the bottom is golden brown. Carefully flip the quesadilla using a spatula and add the remaining tablespoon of olive oil if needed. Cook for another 3-4 minutes until the second side is golden and the cheese has melted.
Serving

Slice and Serve
Remove the quesadilla from the skillet and let it cool for a minute. Slice into wedges and serve with sour cream and salsa on the side.
