Caramel Preparation

    Making the Caramel

    In a medium saucepan, combine the granulated sugar and water over medium heat. Stir until the sugar is dissolved.

    Caramelizing the Sugar

    Once the sugar is dissolved, stop stirring and allow the mixture to boil. Watch closely as it begins to change color, turning to a golden amber. This takes about 8-10 minutes.

    Pouring the Caramel

    Once the caramel reaches the desired color, quickly pour it into a round flan mold or individual ramekins, swirling to coat the bottom. Set aside to cool and harden.

Custard Preparation

    Mixing the Eggs

    In a large mixing bowl, whisk together the whole eggs and egg yolks until well combined.

    Combining Ingredients

    Add the sweetened condensed milk, evaporated milk, and vanilla extract to the eggs. Whisk until the mixture is smooth and well blended.

    Pouring Custard into Mold

    Carefully pour the custard mixture over the hardened caramel in the mold.

Baking

    Preparing the Water Bath

    Preheat your oven to 350°F (175°C). Place the flan mold into a larger baking dish and fill the dish with hot water, about halfway up the sides of the flan mold.

    Baking the Flan

    Bake in the preheated oven for 50-60 minutes, or until the custard is set and a knife inserted in the center comes out clean.

    Cooling

    Remove the flan from the oven and allow it to cool in the water bath for another 30 minutes. Then, refrigerate for at least 4 hours or overnight.

Serving

    Unmolding the Flan

    To serve, run a knife around the edge of the flan to loosen it. Invert onto a serving plate and let the caramel sauce flow over the top.

    Garnishing

    Optional: Garnish with whipped cream or fresh fruit as desired. Cut into wedges and enjoy!
