Cake Preparation

Melt the Chocolate and Butter
In a medium saucepan, combine the unsweetened chocolate and unsalted butter. Place over low heat, stirring constantly until melted and smooth. Remove from heat and let cool slightly.

Mix Sugar and Eggs
In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and thick.

Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously to combine. Add the vanilla extract and mix well.

Add Dry Ingredients
Gently fold in the all-purpose flour and a pinch of salt until just combined. Do not overmix.

Prepare Ramekins
Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder, shaking out excess. Place them on a baking sheet.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake
Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

Cool Slightly
Remove from the oven and let the cakes cool for 1 minute. Carefully run a knife around the edges to loosen.

Invert and Serve
Invert each ramekin onto a dessert plate and gently lift off. Serve immediately with a scoop of vanilla ice cream and chocolate shavings if desired.
