Prep the Bread
Preheat your oven to 400°F (200°C). Slice the Italian bread into 1/2-inch thick slices and arrange them on a baking sheet.

Toast the Bread
Drizzle the bread slices with a bit of extra virgin olive oil and toast in the oven for about 10 minutes or until golden brown and crispy.

Prepare the Tomatoes
While the bread is toasting, wash the fresh tomatoes and dice them into small pieces. Place them in a mixing bowl.

Add the Basil
Chop the fresh basil leaves finely and add them to the bowl with the diced tomatoes.

Incorporate the Cheese
Dice the mozzarella cheese into small cubes and mix it into the tomato and basil mixture.

Add the extra virgin olive oil, balsamic vinegar, salt, and black pepper to the mixture. Gently toss everything together until well combined.

Once the bread is toasted, remove it from the oven and let it cool slightly. Spoon the tomato mixture generously on top of each slice of toasted bread.
