    Prepare the Pineapple

    Cut the pineapple into wedges or rings, depending on preference. Set aside.

    Make the Syrup

    In a saucepan, combine brown sugar, water, dark rum, and vanilla bean. Bring to a boil over medium heat, stirring until sugar is dissolved. Remove from heat and let cool.

    Marinate the Pineapple

    Place the pineapple wedges in a bowl and pour the cooled syrup over them. Allow to marinate for at least 30 minutes.

    Roast the Pineapple

    Preheat a grill or robata grill. Grill the marinated pineapple for about 5-7 minutes on each side until caramelized and slightly charred.

    Prepare the Coconut Chantilly

    In a mixing bowl, combine coconut cream, powdered sugar, lime zest, and lime juice. Whip until soft peaks form.

    Serve

    Plate the grilled pineapple and serve with a generous dollop of coconut chantilly on top. Garnish with fresh mint leaves.
