Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 20 minutes. Remove from heat and let it sit, covered, for another 10 minutes.
Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.
Assemble the Roll
Place a bamboo sushi mat on a flat surface and lay a sheet of nori on top, shiny side down. Moisten your hands with water to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top. Place a line of the spicy tuna mixture and a few slices of cucumber in the center of the rice.
Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water. Repeat with remaining ingredients.
Slice and Serve
Using a sharp knife, slice the rolls into 6-8 pieces. Sprinkle with toasted sesame seeds and serve with soy sauce.
