Prepare the Aubergine

Slice the aubergines into thick rounds, about 1 inch thick. Sprinkle with salt and let them sit for 15-20 minutes to draw out excess moisture.

Preheat the Grill

Preheat your grill or smoker to a medium-high heat, around 375°F (190°C).

Season the Aubergine

Rinse the salted aubergine slices under cold water and pat them dry with a paper towel. In a bowl, mix together olive oil, smoked paprika, black pepper, garlic powder, and chili flakes. Brush this mixture generously on both sides of the aubergine slices.

Grill the Aubergine

Place the seasoned aubergine slices on the grill. Cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.

Serve

Remove from the grill and let them rest for a couple of minutes. Serve warm, drizzled with chili crunch for added flavor.
