Prepare the Seabass

Using a sharp knife, slice the seabass fillet against the grain into thin pieces, about 1/4 inch thick. Arrange the slices neatly on a chilled plate.

In a small bowl, mix the soy sauce and wasabi to your desired taste. Place pickled ginger on the side and sprinkle lemon zest over the sashimi.
