Prepare the Beef
Season the beef tenderloin with salt and black pepper. Heat olive oil in a hot skillet and sear the beef on all sides for about 2-3 minutes until browned. Remove from heat and let it cool. Brush with Dijon mustard.

Assemble the Wellington
Lay out the prosciutto slices on a sheet of cling film, slightly overlapping. Spread the duxelles over the prosciutto, then place the beef on top. Roll tightly using the cling film and chill for 30 minutes.

Bake the Wellington
Preheat the oven to 200°C (400°F). Place the wrapped Wellington on a baking sheet and bake for 25-30 minutes until golden brown. Let it rest for 10 minutes before slicing.
