Prepare the Vegetables
Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add radicchio or pumpkin (for winter) or tomatoes, aubergine, and courgette (for summer). Cook for about 5-7 minutes until vegetables are softened. Season with salt, pepper, and dried oregano.

Assemble the Lasagne
Preheat the oven to 375°F (190°C). In a baking dish, spread a small amount of the vegetable mixture on the bottom. Layer 3 lasagne sheets on top, followed by half of the ricotta cheese, half of the vegetable mixture, and half of the mozzarella. Repeat the layers, finishing with lasagne sheets topped with remaining mozzarella and Parmesan cheese.

Bake the Lasagne
Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
