    Make the Bao Dough

    In a bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until foamy. In a separate bowl, mix flour, baking powder, and salt. Gradually add the yeast mixture to the dry ingredients and knead until smooth. Cover and let it rise for 1 hour.

    Prepare the Tofu Filling

    In a pan, heat sesame oil over medium heat. Add diced tofu and soy sauce, cooking until golden brown. Remove from heat and set aside.

    Prepare the Spicy Avocado

    In a bowl, mash the avocado and mix in sriracha sauce, lime juice, and chopped cilantro. Adjust seasoning as desired.

    Assemble the Bao

    Once the dough has risen, knead it briefly and divide it into small pieces. Roll each piece into a circle, place a spoonful of tofu and spicy avocado mixture in the center, and fold the edges to seal.

    Place the bao in a steamer basket lined with parchment paper. Steam over boiling water for about 15 minutes until fluffy and cooked through.
