    Prepare the Sweet Potatoes

    Bake or steam sweet potatoes until tender. Allow to cool slightly, then peel and mash to a smooth purée.

    Make the Flatbread Dough

    In a mixing bowl, combine sweet potato purée, all-purpose flour, olive oil, baking powder, and salt. Mix until a dough forms. If the dough is too sticky, add a little more flour.

    Cook the Flatbreads

    Divide the dough into small balls and roll them out into flat rounds. Heat a skillet over medium heat and cook each flatbread for about 3-4 minutes on each side until golden brown.

    Prepare the Toppings

    In the same skillet, cook the Italian sausage until browned. Remove and set aside. In the same pan, add pine nuts and toast lightly until golden. Add kale and sauté until crispy.

    Assemble the Flatbread

    Top each flatbread with a layer of cooked sausage, toasted pine nuts, crispy kale, and shaved parmesan cheese.
