Sticky Toffee Pudding Ingredients

Method

Sticky Toffee Pudding Directions

  1. 1

    Prepare the Dates

Chop the pitted dates and place them in a bowl. Pour the boiling water over the dates and let them soak for about 15 minutes until softened.

  2. 2

    Make the Batter

In a mixing bowl, cream together the unsalted butter and brown sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.

  3. 3

    Combine Ingredients

Mash the soaked dates with the water using a fork until smooth. Fold the date mixture into the butter and sugar mixture. Sift in the self-raising flour and baking powder, and gently fold until just combined. Finally, fold in the diced pears.

  4. 4

    Bake the Pudding

Preheat your oven to 180°C (350°F). Pour the batter into a greased baking dish and bake for 25-30 minutes, or until a skewer inserted into the center comes out clean.

  5. 5

    Prepare the Sauce

In a small saucepan, combine the dark brown sugar and heavy cream. Heat over medium heat, stirring until the sugar dissolves and the sauce is smooth and slightly thickened.

  6. 6

    Serve

Once the pudding is baked, let it cool for a few minutes. Cut into squares and serve warm, drizzled with the toffee sauce.
