Preparation
Prepare the Pecan Sponge
In a bowl, mix together flour, ground pecans, baking powder, and salt. In another bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract. Gradually add the dry ingredients to the wet mixture, alternating with milk, until well combined.
Steam the Cake
Pour the batter into a greased steamer mold or a heatproof dish. Fill a large pot with water and bring it to a simmer. Place the mold in the pot, cover, and steam for 30-35 minutes or until a toothpick inserted comes out clean.
Prepare the Mulled Pear Purée
Peel, core, and chop the pears. In a pot, combine the chopped pears, 1 cup of water, 1 cinnamon stick, 2 cloves, and 2 tablespoons of sugar. Bring to a boil, then reduce heat and simmer until pears are soft. Remove the spices and purée the mixture using a blender or food processor until smooth.
Serve
Slice the steamed pecan sponge and serve warm with a generous drizzle of the mulled pear purée on top.
